Located near Cadillac, on the right bank of the Garonne, Château Birot has been making wine with for over 200 years. Built during the second half of the 18th century for the important Bordeaux wine merchant Monsieur de Parouty, the estate was purchased in 1989 by Eric and Hélène Fournier-Casteja, both of whom hail from winemaking families throughout Sauternes and Saint-Émilion.
Particular attention and care is given to the vineyard to control yields in order to ensure each grape the best possible development. The deliberate choice to maintain hedgerows among the parcels of vines at Château Birot is to reinforce protection for the local ecosystem, as well as to favor the reworking of soils that naturally protect against fungal diseases.
This is a blend of Merlot (87%) and Cabernet Sauvignon (13%). Fermentation takes place in stainless steel. The wine ages for 18 months in a combination of barrels and concrete vats.
"Rich blackberry and black-currant flavors give this wine its ripe character. They are already well balanced by the spicy tannins and dry core. The wine will develop well and should be ready from 2019."
