Located near Cadillac, on the right bank of the Garonne, Château Birot has been making wine with for over 200 years. Built during the second half of the 18th century for the important Bordeaux wine merchant Monsieur de Parouty, the estate was purchased in 1989 by Eric and Hélène Fournier-Casteja, both of whom hail from winemaking families throughout Sauternes and Saint-Émilion.
The estate has 37 hectares of vineyards, 16 dedicated to sauvignon blanc and semillon, planted on a clay-limestone terroir with some gravelly areas. Particular attention and care is given to the vineyard to control yields in order to ensure each grape the best possible development. The deliberate choice to maintain hedgerows among the parcels of vines at Château Birot is to reinforce protection for the local ecosystem, as well as to favor the reworking of soils that naturally protect against fungal diseases.
The Sauvignon Blanc and Sémillion are harvested simultaneously and in equal amounts. The wines are vinified in oak barrels at the beginning of their fermentation and are bottled after a year of aging in 20% new French Oak.
