Rotation Cabernet Sauvignon 2016
The 2016 Cabernet Sauvignon is a blend of 85% Cab Sauvignon, 12% CabFranc and 3% Merlot. This blend creates the beauty and elegance typical of California Cabernet Sauvignon. The Cab Franc adds a wonderful earthiness and mid-palate spice note that is rounded out by the black and blue berries that come from the touch of Merlot. The dominant profile remains that of the Cab Sauvignon. Sourced from vines ranging around 15 years, we find that the grapes' youth and vitality lend to the strength of character, showcased by richness but not an over-extraction. We fermented at slightly higher temperatures than normal to coax the richness from the Cab Sauvignon grapes. We picked some plots earlier than others in order to manage a balance of vine ripeness and fermentation technique. The 2016 opens with beautiful ripe red and black currants on the nose and a touch of smoke, and the six months fermentation in 25% new French oak adds a touch of vanilla and silkiness to the fruit-forward palate. The Cab Franc and Merlot provide a further depth of fruit and soft spice to create a well-balanced California Cabernet Sauvignon.
